One way to beat the February doldrums is to focus on the fun stuff that happens in this much-maligned month: Super Bowl Sunday, Valentine’s Day, Presidents Day sales, Chinese New Year… my birthday! (OK, maybe not top of the list for you). Rather than buy into the consumerism, I prefer to celebrate with food, especially food that makes those you cook for feel like things aren’t so cold and grey after all. So this week’s meal plan serves as a little Valentine’s Day card of foods made with love, for those you love.
The ingredient list is based on the recipe quantities, some of which yield 2 servings, some 6-8, so be careful to adjust accordingly for your clan or yourself. Yes, even if you’re cooking for one doesn’t mean it shouldn’t be special and made with affection!
